Bonnington Linn is a semi-hard, unpasteurised cow's milk cheese made by Jane and Mark Haslett at The Wee Cheese Company in Dumfriesshire. It's a washed-rind cheese, giving it a distinctive orange hue and a rich, savoury flavour with hints of nuts and caramel. Aged for around 4-5 months, it develops a firm texture and a complex taste profile.
