Chevin Goat is a soft, unpasteurised goat's milk cheese made by Joe Schneider in North Wiltshire. It has a bloomy rind and a smooth, creamy texture that becomes more intense with age. The flavour is mild and lemony when young, developing a more complex, earthy character as it ripens.
