Sparkenhoe Red Leicester is a traditional unpasteurised Red Leicester cheese made by David and Jo Clarke on their farm in Leicestershire. It is clothbound and matured for 12-18 months, developing a rich, nutty flavour and a firm, crumbly texture. The cheese is a vibrant orange colour, characteristic of Red Leicester.
