Karst is a semi-hard goat's cheese made by St Tola in County Clare, Ireland. It has a distinctive, slightly crumbly texture and a nutty, earthy flavour with hints of citrus. Aged for at least 3 months, it develops a beautiful rind and a rich, complex taste. Perfect for a cheese board or paired with fruit and crackers.
