Sparkenhoe Blue is a traditional Leicestershire farmhouse blue cheese made by David and Jo Clarke. It's a firm, crumbly cheese with a distinctive blue veining and a rich, savoury flavour with hints of spice and a pleasant tang. Made with unpasteurised milk from their own Friesian cows, it's aged for at least three months to develop its complex character.
