Elrick Log is a soft, unpasteurised goats' cheese made by Jane and Mark at Errington Cheese in Lanarkshire, Scotland. It has a delicate, lemony flavour with a creamy texture that becomes more crumbly with age. The cheese is hand-ladled and matured for 3-4 weeks, developing a bloomy rind.
