Wittenham is a beautiful, soft, bloomy-rind cheese made by Joe Schneider in Oxfordshire. It's a vegetarian cheese, washed in brine and then matured for 3-4 weeks. The cheese has a smooth, creamy texture and a rich, mushroomy flavour with a hint of citrus.
