Like Champagne and all the other ‘top’ sparkling wines, Cava is made with the second fermenation in the bottle, rather than in pressurised stainless steel tanks for the likes of Prosecco. This organic Cava is made without any additional sugar at the second fermentation stage giving it dry yeasty depths that are pleasantly surprising for a wine at this price point.
