Langres is a French cheese with a distinctive orange rind, achieved by washing it with brine and annatto. It has a soft, creamy texture and a rich, slightly tangy flavour. The top of the cheese is traditionally indented, creating a hollow known as the 'couronne' or crown, which is often filled with champagne or marc de Bourgogne before serving.
