Selles-sur-Cher is a small, unpasteurised goat's milk cheese from the Loire Valley in France. It's recognisable by its ash-coated rind and distinctive blue-grey mould. The cheese has a firm, crumbly texture and a rich, tangy flavour with nutty undertones. It's typically aged for a few weeks, developing a more complex taste over time. Perfect for a cheese board.
