Harbourne Blue is a distinctive goat's milk cheese from the West Country. It's made by the Ticklemore Dairy in Devon, using milk from their own herd of goats. The cheese is matured for around three months, developing a firm, crumbly texture and a rich, complex flavour with a pleasant tang and a hint of sweetness. It's a beautiful cheese with a natural, rustic rind and a pale, creamy interior marbled with blue veins.
