Ragstone is a semi-soft, unpasteurised goats' cheese made by Arthur and Jane at Neal's Yard Dairy. It has a distinctive pyramid shape and a delicate, lemony flavour that intensifies with age. The rind is bloomy and edible, encasing a creamy, slightly crumbly paste.
