Foxearle is a distinctive cheese from Somerset, made by Joe and Jane Bennett. It's a semi-hard, washed-rind cheese with a complex flavour profile. Expect notes of earthy mushrooms, sweet hay, and a hint of fruitiness, with a creamy yet firm texture. It's matured for 6-8 weeks, developing a beautiful orange rind.
