They are similar to stewing steaks, but a little more tender and provide delicious bites of flavoursome beef. Braising steaks make a delicious choice for a beef stew or even a curry! What is a braising steak? Braising steak is a generic term for a selection of different beef cuts that are best suited for long, slow cooking (braising). Common cuts for braising include chuck, skirt, leg and flank. This is because these muscles are very hard-working during the lifetime of the animal, making the meat tough if cooked quickly, but melt-in-the-mouth when braised. What is braising? Braising is a two-step process. First, the steak is seared on a high temperature. This instant heat helps to caramelise the surface of the meat, creating a more complex flavour. The steak is then transferred to a pot with stock or another liquid and simmered slowly until it’s tender and will melt in the mouth. The liquid helps to moderate the heat, but it’s also a great way to add flavour. Our Premium Beef We source our beef from farmers local to us in South Yorkshire. Eat Great Meat are 8th generation butchers and so have built relationships with farmers all around the local region. It allows us to select only the very best beef. It comes from grass-fed, heritage breeds of cattle that have been bred for hundreds of years to produce the finest meat.
