An easy evening, a little closer to home.
You do not need a long shopping list to make a good bowl of pasta. Here, courgettes take on a little colour in olive oil while the spaghetti cooks. Garlic brings warmth, spinach wilts into the pan, and lemon keeps everything bright. A splash of the starchy cooking water brings the sauce together without cream.
This is a useful recipe for the gap between a busy day and a proper dinner. Keep the courgette slices fairly thin, give them room in the pan, and have the lemon ready before you drain the spaghetti. The last few minutes are simply a matter of tossing everything together.
Make the shopping list work for you.
The ingredient links below point to specific products and local sellers in Streetly. The amount used in the recipe is shown first; the product link shows what you actually buy. You may have olive oil and salt already, so check your cupboard before adding whole packs.
Wholewheat spaghetti gives this dish a little extra bite. If you choose a different pasta in the app, use the cooking time on its packet and keep the same 200g recipe quantity. Start with half the lemon juice, taste, and add the rest if you would like a sharper finish.

Method
- 01
Prepare the vegetables
Wash the courgette and spinach. Slice the courgette into thin half-moons and peel and finely slice the garlic. Finely grate the yellow zest from the lemon, avoiding the white pith, then halve it for juicing.
- 02
Cook the spaghetti
Bring a large pan of water to the boil and add a little salt if you use it. Add the spaghetti and cook according to the packet instructions until just tender. Before draining, reserve a mug of the pasta cooking water.
- 03
Give the courgette some colour
While the pasta cooks, heat the olive oil in a wide frying pan over a medium-high heat. Add the courgette and cook for 7-9 minutes, turning occasionally, until tender with some golden edges. Use two batches if your pan is small.
- 04
Add garlic and spinach
Reduce the heat to medium. Stir in the garlic and cook for about 1 minute, keeping it pale rather than brown. Add the spinach with a splash of the pasta water and stir for 1-2 minutes until wilted.
- 05
Toss and finish
Add the drained spaghetti, lemon zest and juice from half the lemon. Toss over a low heat, adding a little reserved cooking water at a time until the pasta is glossy and the ingredients are well mixed. Taste and add more lemon juice or a little salt if needed. Divide between two bowls and serve immediately.
