A small pan of something comforting.
Butter beans are a useful starting point for an easy dinner. They hold their shape while the tomato sauce simmers, and a few lightly crushed beans help thicken it. Garlic, olive oil and a little lemon keep this version simple, with spinach stirred through just before serving.
There is no stock cube or long spice list to find. The tomatoes do most of the work, so give them a few minutes to simmer before adding the beans. A wide saucepan or deep frying pan helps the sauce reduce without needing a long cooking time.
Use the cupboard, then shop the rest.
Choose ready-cooked tinned butter beans for this recipe. The quantities assume two 400g tins, drained and rinsed; check the pack sizes when you follow the product links. Dried butter beans need their own soaking and cooking process and are not a direct swap here.
The lemon is a finishing touch rather than the main flavour. Add a small squeeze first, taste, and stop when the sauce feels balanced. The whole dish should be piping hot before serving. The ingredient cards below keep the cooking quantities separate from the price of each full product pack.

Method
- 01
Prepare the ingredients
Drain and rinse the butter beans. Peel and finely slice the garlic and wash the spinach. Open the chopped tomatoes so they are ready to add to the pan.
- 02
Soften the garlic
Warm the olive oil in a deep frying pan or saucepan over a medium-low heat. Add the garlic and stir for about 1 minute until fragrant. Keep it pale; if it starts browning quickly, reduce the heat.
- 03
Simmer the tomatoes
Add the chopped tomatoes and 100ml water. Bring to a gentle simmer and cook uncovered for 8-10 minutes, stirring occasionally, until the sauce begins to thicken.
- 04
Warm the butter beans
Stir in the drained butter beans. Simmer gently for 5-7 minutes until hot throughout, adding a splash of water if the sauce becomes too thick. Press a few beans against the side of the pan with a spoon for a slightly thicker sauce.
- 05
Finish with spinach and lemon
Stir in the spinach and cook for 1-2 minutes until wilted. Add a little lemon juice and salt to taste. Check that the stew is piping hot throughout, divide between two bowls and serve.
