This is the comforting soup and toastie we recently shared on Streetly socials. Roasting the tomatoes, peppers and red onion gives the soup its sweetness and a little colour at the edges, while garlic and vegetable stock bring it together. There is no need to peel the tomatoes: a good blend makes the soup smooth enough for an easy lunch or supper.
The toastie is part of the pleasure. Basil pesto goes inside the sourdough with grated cheddar, then the outside is brushed lightly with olive oil and cooked until golden. The recipe makes two bowls of soup and one generous toastie to cut in half and share. Allow about 40 minutes, with the toastie cooking while the vegetables finish roasting.
A shopping list that matches the recipe.
Choose ripe red peppers where available. The linked Streetly listing is a mixed pack of sweet peppers, so colours may vary; other ripe sweet peppers also work, although the soup colour and sweetness will differ slightly. The cooking quantities below are separate from the pack sizes sold by the shops. In particular, check the tomato and pepper pack weights when buying enough for the recipe.
The pesto shown in the social post is Zest vegan basil pesto; the shopping link below points to the available basil pesto listing. The soup does not need cream. If you already have a little cream or fresh basil, you can add a splash or a few leaves to finish, as in the original post. Check the actual product labels for dietary suitability.
For a whole toastie each, use four slices of sourdough and double the pesto and cheddar. The soup quantities stay the same.

Method
- 01
Heat the oven and prepare the vegetables
Heat the oven to 220°C, or 200°C fan. Wash the tomatoes and peppers. Cut the tomatoes into wedges, remove the pepper stalks and seeds, and cut the peppers into roughly 3cm pieces. Peel the red onion and cut it into wedges. Leave the two garlic cloves in their papery skins.
- 02
Roast until soft and lightly charred
Put the tomatoes, peppers, onion and unpeeled garlic on a large roasting tray. Toss with 2 tablespoons of olive oil and a little salt and black pepper. Spread into a single layer and roast for 25-30 minutes, until the vegetables are soft with a little colour at the edges. If they need longer, give them a few extra minutes. Prepare up to 500ml hot vegetable stock following the pack instructions.
- 03
Make the cheese and pesto toastie
During the final 10 minutes of roasting, spread the pesto over the inside of each sourdough slice. Add the cheddar to one slice and put the other on top, pesto-side down. Brush the outside lightly with the remaining teaspoon of olive oil. Cook in a frying pan over a medium-low heat for 3-4 minutes on each side, pressing gently, until the bread is golden and the cheese has melted. Lower the heat if the bread colours before the cheese melts.
- 04
Blend the soup
Let the roasted garlic cool enough to handle, then squeeze the soft cloves out of their skins. Transfer them, the other roasted vegetables and the tray juices to a large saucepan. Add 350ml of the hot stock. Take the pan off the heat and blend with a hand blender until smooth, then add more stock a little at a time to reach the thickness you like. Return to a gentle simmer until piping hot and season to taste. If using a jug blender, follow its instructions for hot liquids and never seal boiling soup inside it.
- 05
Serve and share
Divide the hot soup between two bowls. Cut the toastie in half and serve one half with each bowl. If you already have cream or fresh basil, add a small splash or a few leaves to finish. Serve straight away while the toastie is crisp and the cheese is melted.
Read the ingredient labels for allergens and dietary suitability, and follow any pack-specific cooking instructions. Water used for cooking is a pantry essential.
A GOOD MATCH FOR YOUR MEAL
Wine and beer pairings
A bottle or a beer to bring the flavours together, chosen from Streetly's independent shops.
Crocera Barbera d’Asti
This juicy Barbera brings cherry and plum flavours, with enough freshness to sit comfortably beside the tomatoes. Its generous fruit suits the sweetness of the roasted peppers, while the cheddar toastie gives the wine a savoury partner.
From Rise & VineSamuel Smith Organic Pale Ale
A rounded pale ale is a good match for a golden cheese toastie. The malt character complements the toasted sourdough and roasted vegetables, while the hop finish offers a refreshing contrast to the melted cheddar and pesto.
