Approx weight: 400-500grams Marinated Pork Ribs A rack of ribs is a delicious way to enjoy pork (if a little messy!) and are truly best when marinated in a delicious sauce to bring out the flavours of the succulent pork and please even the fussiest eaters. We don’t just have British pork, but source our pork from Mount Pleasant Farm in Sheffield, South Yorkshire. We’ve known Steve, the farmer, for years and our personal relationship means that we can guarantee the very best quality of meat. The pork all comes from a particular breed of pigs: Duroc X Landrace. It’s a combination of the American Duroc, which are known for their hardiness and thorough muscle growth, with the Danish Landrace. The Danes used Landrace to quickly become the world’s top exporter of bacon! The Duroc X Landrace breed gets the best of both worlds and makes for truly delicious pork ribs. Marinade We have a choice of marinades available for our rack of ribs: smokey BBQ, Louisiana Chilli, Bourbon Whisky, Salt & Pepper and Chinese. We’ve tried each one and we can’t choose a favourite! How to Cook Marinated Ribs There are loads of different ways to cook marinated ribs, but the BBQ or roasting in the oven is the best. You want the meat to fall away from the bone and therefore make sure you give them plenty of time. Here’s a guide to cooking a rack of ribs on the BBQ: Preheat the oven to 200ºC (180 fan). Once the oven has reached temperature, cover the marinated ribs in foil and place on a roasting dish in the oven for 1 hour 15 minutes or until the meat easily pulls away from the bone, removing the foil for the final 15 minutes of the cooking time. During this time, pre heat your BBQ. Once cooked, transfer the ribs to your hot BBQ and cook for another 5-10 minutes at a medium-low temperature. Transfer the ribs to a board to cut up and enjoy with your favourite sides!
